Steak House Tomato and Blue Cheese Organic Salad
Makes 2 servings.
This salad takes only minutes to make and can be prepared up to 2 hours before dinner.
Ingredients:
2 cups mixed organic greens or field greens
1 can (28 ounces) Muir Glen organic whole peeled tomatoes, drained, cut into 1/2 inch-thick slices
1 medium organic cucumber, peeled and sliced 1/2 inch thick
1/2 medium organic red onion, sliced 1/2 inch thick
3/4 cup crumbled organic blue cheese (3 ounces)
1/4 cup organic extra-virgin olive oil
1/4 cup organic red wine vinegar or balsamic vinegar
1/8 teaspoon sea salt
1/8 teaspoon freshly ground black pepper
Divide greens evenly between dinner plates. Arrange overlapping tomato and cucumber slices on greens. Sprinkle onion over tomatoes; top with blue cheese.
Whisk together olive oil and vinegar; drizzle over salads. Season with sea salt and pepper.
