Southwest Organic Pasta Salad
Makes 4 servings.
This quick and easy pasta combines flavors of the Southwest for a salad that will disappear fast!
Ingredients:
1 1/2 cups uncooked small organic pasta shells
1 jar (16 ounces) Muir Glen organic roasted garlic salsa
2/3 cup chopped organic red bell pepper
2/3 cup canned or frozen organic whole kernel corn, thawed and drained
1/3 cup sliced ripe olives, drained
3 tablespoons chopped fresh organic cilantro
1 can (15 ounces) organic black beans, rinsed and drained
Cook and drain pasta as directed on package. Toss hot pasta with salsa.
Stir in remaining ingredients. Cover and refrigerate several hours before serving.
