Organic Peanut Chicken
Makes 6 servings.
The peanut butter in this recipe is an unexpected ingredient that provides a unique flavor to this easy and delicious dish.
Ingredients:
1 tablespoon organic olive oil
3 cloves organic garlic, minced
1 medium organic onion, finely chopped (1/2 cup)
1/4 cup finely chopped organic celery
1 cup sliced shiitake mushrooms
12 skinless organic chicken thighs
1 jar (25.5 ounces) Muir Glen organic Cabernet marinara pasta sauce
1/4 cup organic creamy peanut butter
1/4 cup organic white wine or chicken broth
Spray large nonstick skillet with cooking spray. Heat olive oil over medium heat. Cook garlic in oil 3-5 minutes or until translucent. Stir in onion, celery and mushrooms; cook 5-7 minutes or until tender. Add chicken; reduce heat to low. Cover and cook, turning chicken occasionally, 20 minutes. Stir together pasta sauce and peanut butter; add mixture to skillet. Stir in wine; cover and cook an additional 10 to 15 minutes or until chicken juices are no longer pink.
