Blue Cheese Cabernet Organic Hamburgers
Boil together until reduced:
750 ml of organic Cabernet Sauvignon
1/4 cup minced organic shallots
1 tablespoon each freshly chopped thyme and rosemary
Remove from heat add:
1 tablespoon organic butter
2 tablespoon organic brown sugar
Whisk until butter melts and sugar dissolves.
Mix together in a bowl:
2 lbs ground organic beef
1 teaspoon sea salt
1/2 teaspoon freshly ground pepper
1/4 cup wine reduction
Form into patties, brush grill rack with oil.
Grill burgers on medium high heat for about 3 minutes until brown on the bottom. Turn, brush with wine reduction and continue cooking brushing occasionally with wine reduction until desired doneness.
Place a slice of natural Blue Cheese on burger and grill until cheese melts.
Tip: Instead of hamburger buns, serve burgers on foccacia bread, cut lengthwise.
